Many backyard farmers know the feeling of having far too many tomatoes ripen all at the same time. Such was my dilemma one hot July afternoon. Luckily, I had my smoker fired up and half filled with ribs. In a "what's the worst that could happen" moment of inspiration, I put a portion of our tomato abundance into the smoker and let 'em go, low and slow. A few classic salsa ingredients later, along with a beer or two for culinary inspiration, out came the "Seventh Wonder of the Salsa World."
As we continued to invite friends and family over for backyard barbecues, and some of the aforementioned inspirational beverages, I would make a batch of Smoked Tomato Salsa. The crowd's reaction was always the same: "Wow, I've never tasted salsa like this, you should sell this stuff!" And so, CJ's Smokehouse Texas Smoked Salsa was born.
